Sebelum dimasak menjadi menu, rebus lidah sapi dalam air mendidih. Beri jahe dan daun salam untuk mengurangi bau amis dan memberi cita rasa lebih. Setelah direbus, lepas kulit luarnya sehingga dagingnya terasa lembut.
